Nikkei is the name given to Japanese emigrants and their descendants. In Peru, where they arrived at the end of the 19th century, their technique met ají peppers, lime and Pacific fish, and a cuisine of its own was born.
Lima Nikkei brings the Peruvian group Embarcadero 41 to Spain: Madrid was its gateway to Europe. Flame-seared nigiri, ceviche in tiger’s milk and wok-fired mains, on Rosario Pino street.
